Olive-Oil Poached Fish

This recipe can be used with any fish – salmon, halibut, even shellfish.

Ingredients

  • 1 pound of fish of your choice

  • Olive oil

  • Fresh herbs such as thyme, parsley, garlic, red pepper flakes (optional)

Directions

  1. Preheat the oven to 275° 

  2. Put a large skillet in the oven to preheat

  3. Add a thin layer of olive oil 

  4. Place the fish in the skillet, right side up, with just enough olive oil to cover them 

  5. Add herbs and squished garlic clove

  6. Baste often until cooked through

  7. Depending on the thickness of your fish, it could take between 15 to 30 minutes.
