Chia Seed Pudding

This is what I call a "healthy treat". It comes together very quickly and is perfect for a special occassion.

Ingredients

  • 3 Tbsp organic chia seeds

  • 1 cup unsweetened coconut milk

  • 2 Tbsp unsweetened coconut cream

  • 1 Tbsp unsweetened shredded coconut

  • Fresh blueberries or chopped nuts for the topping

Directions

  1. Combine all ingredients together in a bowl and chill in refrigerator until the pudding sets, about 30 minutes

  2. Add topping as desired
