Cooking fresh, seasonal carrots with butter and apple cider brings out their natural sweetness. This dish is perfect for a weekday meal or for any special meal and holidays! It tastes even better the next day.
1 bunch carrots
1⁄2 cup water
4 Tbsp organic apple cider vinegar
3 Tbsp unsalted organic butter
Salt and pepper to taste
2 Tbsp chopped fresh thyme, dill or Italian parsley
Directions
Peel the carrots, or, if using baby carrots, steam them whole. Place the carrots in a deep pan and addthe water. Bring to a simmer, then reduce the heat to very low and allow the carrots to gently steamfor about 4 minutes. Check along the way; you want them still slightly crunchy, or al dente.
When the carrots are cooked, remove them from the pan with a slotted spoon, into a bowl. Add thebutter, the apple cider vinegar, and season to taste with the salt and pepper. Once seasoning has beenperfected, add the chopped herbs and stir to combine.
